March is National Pea Soup Month, and what better way to celebrate than by making America's favorite comfort soup? This creamy and delicious soup is easy to make and perfect for a chilly day.
Ingredients:
1 cup green peas, fresh or frozen 2 cups vegetable broth 1 potato, peeled and chopped 1 carrot, peeled and chopped 1/2 cup plain yogurt Salt and pepper, to taste
Instructions:
- In a large pot, combine the green peas, vegetable broth, potato, and carrot. Bring to a boil over medium-high heat. Lower the heat to medium-low and simmer for 10 minutes.
- Remove from heat and let cool slightly. Puree in batches in a blender or food processor until smooth. Stir in the yogurt and salt and pepper to taste. Serve hot.

Use an immersion blender or food processor to puree the soup until smooth. Season with salt and pepper to taste. Serve hot with some crusty bread for dipping!

Remove from heat and use an immersion blender (or carefully transfer to a blender) to blend until smooth. If needed, add more stock until desired consistency is reached. Season with salt and pepper, to taste. 5. To serve, ladle soup into bowls and top with crispy bacon, fresh chopped parsley, and black pepper if desired
